Meadowood’s 12 Days of Christmas, Day 12: Christopher Kostow

As is tradition, Christopher Kostow takes the anchor leg of his star-filled guest chef series, putting a tidy little bow on another year of Meadowood’s 12 Days of Christmas.

It’s fascinating to watch how the 12 Days series has evolved, as it becomes increasingly impressive how much Kostow and his team contribute each dinner. Not only do they host and curate the guest chefs, but they create their own dishes for those guest chef dinners. They came up with dozens of brand new dishes, mimicking a range of styles and cuisines, from the Thai-inflected Andy Ricker dinner with “stick food” and whole fried catfish to the David Chang dinner with abalone grilled in seaweed and turnip mushi. The Restaurant at Meadowood spent weeks, if not months, developing those individual dishes — and Kostow points out that in all likelihood, they’ll never use them again.
