The Restaurant at Meadowood’s annual 12 Days of Christmas guest chef series is well underway. To this point in Meadowood’s 12 Days series, the first two chefs — Andy Ricker and Rodolfo Guzman — made a point of bringing “their” flavors to Napa Valley, showcasing their respective styles and cuisines to a new audience. Carlo Mirarchi — the chef and owner of Roberta’s and Blanca, both in Brooklyn — had a slightly different approach to his dinner last night.
“We’re trying to work with a lot of the stuff that [Christopher Kostow] has here,” Mirarchi says.
Chief on Mirarchi’s list was an ingredient that simply doesn’t exist on the East Coast: Abalone.
“To me, it’s the West Coast ingredient,” he says.
With the desire to do an abalone dish firmly embedded, Mirarchi worked with the Meadowood kitchen to riff on the best approach to creating an abalone dish. He wanted to make it work with uni, so they decided that they’d poach it really lightly, and finish it over a grill or pan. Paired with the aforementioned uni, it was finished with a yogurt mixed with daikon radish juice and garnished with lovage.
