Here at Inside Scoop, we’re reviving our own tradition of individually tracking each night’s charity dinner — and the exploration of cuisine from the chefs from around the world, through their words and their food. To this point, the 12 Days guest chef series at Meadowood has taken us to Thailand, Chile, Japan and New York; now, we go to the American South.
Ashley Christensen was the visiting chef on the fifth night. She is a chef and restaurateur who has built herself quite the empire in Raleigh, North Carolain, with a collection of restaurants like Poole’s Diner, Beasley’s Chicken and Honey, Chuck’s, Fox Liquor Bar and even more to come. Accordingly, at last night’s dinner, Christopher Kostow and his crew at the Restaurant at Meadowood — who are challenging themselves to create new dishes at every dinner, which no small feat — took on a Southern bent as well, embracing many of the regional benchmarks: grits, green tomatoes, biscuits and even pecan pie.
